my lettuce wraps...

i know yesterdays post was a recipe for banana french toast and today is another post for another recipe.  i have been craving lettuce wraps for weeks now.  i've never made them before.  love the ones at P.F. Changs even the ones at Cheesecake Factory are yummy.  found some recipes online and took bits and pieces from a few different ones but they were all basically the same.  i just happened to use what i had in my pantry.

ingredients:

16 boston bib or butter lettuce leaves

( i used iceberg because that's what i had)

1 pound of ground pork

1 can of water chestnuts

1 small onion diced

1 cup mushroom diced

2 cloves of garlic minced

1 tbs of soy sauce

2 tsp sesame oil

2 tbs of oyster sauce

3 tbs of hoisin sauce

(i added more because i love hoisin sauce)

directions:

in skillet brown the ground pork in 1 tbs of oil stirring often and reducing heat if necessary.  drain and set aside.  cook the onion in the same pan.  add the garlic, soy sauce, oyster sauce, hoisin sauce to the onions and stir.  stir in water chesnuts and sesame oil.  continue cooking until the onions just begin to wilt.

allow each person to spoon a portion of the meat into a lettuce leaf.  wrap the lettuce around the meat like a burrito and enjoy!  (i normally drizzle more hoisin sauce before i feast on mine.)

it was a hit with the family so i am definitely putting this on my rotation of meal plans!  super quick and super easy!
